The assignment this week: Post your favorite fall recipe/recipes to share.  I love trying new recipes, do you?  It can be baking, main dishes, veggies, dessert or anything else you can think of.  There are no limits.  Mmmmmm..I can’t wait to take a look at some of those recipes.


I have two recipes that have become my all time favorites.


 


A while back, we went to some friends house for dinner. My friend had made a batch of homemade gingerale for us to have with our meal. After one sip, I was hooked! I didn't know that it could be so easy, and so tasty! Now, I try to keep a jar of the gingerale syrup on hand in my fridge.




 


Homemade gingerale





Here is what you will need


1 cup peeled chopped ginger

3 cups water

1 cup sugar

club soda

lime juice

lime wedges



Bring 3 cups of water and sugar to a boil in a saucepan. Add ginger. Reduce heat to medium low and let ginger sit in the simmering water for 5 minutes. Remove from heat and let sit for 20 minutes. Strain liquid through a fine mesh strainer. Discard ginger pieces.

Make individual (tall) glasses of ginger ale by mixing 1/4 cup of ginger syrup, and 1/2 cup of club soda. Add a few drops of fresh lime juice and a lime wedge to each glass. Depending on how strong you would like it, increase or decrease the amount of ginger syrup.

My mom introduced me to this soup, found in the Urban Homemaker.

It is so good!  It's one of those dishes that you could keep eating, and eating, and eating, although your tummy is telling you that you are full.

 

Cauliflower Potato Soup

This soup is delicious. You may cut both the butter and cream cheese from the original recipe in half to lower the fat content. It is still delicious and satisfying. This soup has become a family favorite anytime of year.

4 large potatoes, peeled and quartered
1 head cauliflower, broken into florets
1 cup chopped onion
2 cups water
2 cups milk or alternative
1 tsp salt
1 tsp pepper
1 TB Spike (seasoning usually found in grocery stores)
1 - 8oz. package cream cheese (may halve)
1/4 cup butter


In a large pot, combine the first 8 ingredients. Bring to a boil. Reduce heat and simmer, covered for 20 minutes**, stirring occasionally. Slightly mash mixture with potato masher in pan. Add remaining ingredients and blend well. Simmer for 10 minutes uncovered.

  4. Thanks so much for the ginger ale recipe! I'm really excited to try it - my husband loves it. It's amazing what you can make from scratch if you just have the recipe.

  5. That ginger ale recipe sounds great. I definitely want to make it.
    So, when I click on your tab that says RSS the page opens up and it looks like an RSS feed, but the little RSS symbol isn't in the address bar. Does that make sense? So I'm unable to add it to my feeds. Let me know if you can figure that out!
